Americans don’t eat a lot of lamb, even though the meat is popular in Europe, Australia, and parts of Asia. And that’s too bad because, compared to cattle, sheep farming requires less land. It’s also often easier (and less expensive) to find grass-fed lamb than beef in supermarkets. These are all reasons why cultured foodies are now serving lamb at dinner parties. If you’re ready to try the trend—or are an old-hand at lamb and simply need a new recipe—these savory-sweet ribs will please everyone at your table, lamb lovers and sheepish neophytes alike. The dish is fusion, with flavors from China and the Middle East, and pairs best with rice, quinoa, or a colorful salad.

Ribs
1 lb lamb ribs, scored and separated
1 tsp Chinese five spice powder
¼ Tbsp ground ginger
¼ Tbsp ground cumin
1 tsp sea salt
3 Tbsp reduced-sodium tamari
2 cloves garlic, peeled
2 Tbsp honey
1 Tbsp sesame seeds
1 handful fresh coriander leaves for garnish

Sauce
2 figs
2 plums
½ tsp cinnamon
¼ tsp sea salt
1 Tbsp water

1.Place ribs in a large bowl with Chinese five spice, cumin, ginger and salt. Rub spices over meat, cover, and let sit in the refrigerator overnight.
2.Heat the oven to 325°F. Fit a wire rack into a rimmed baking sheet and arrange ribs on rack. Cook for 1 hour 15 minutes.
3.Meanwhile, roughly chop the figs and plums, making sure to remove pits. Add all sauce ingredients to a small saucepan. Bring to a boil, then reduce heat to a simmer and cook for 35 minutes. Remove from heat and let cool. Using an immersion or regular blender, puree sauce until smooth.

4.Crush the garlic in a bowl and add the honey, tamari, and sesame seeds. Mix well. Once ribs have cooked for the full hour and 15 minutes, baste ribs in garlic-honey-tamari mixture. Increase oven heat to 400°F and cook for another 7 minutes.
