Ingredients

For the Crust

  • 2 1/4 cups all-purpose flour (250 grams)
  • 1/4 cup powdered almonds (30 grams)
  • 1 stick of cold butter cut into cubes (150 grams)
  • 3/8 cup of sugar (80 grams)
  • A pinch of salt
  • A pinch of powdered vanilla

For the Sauce

  • 3/8 cup of sugar (80 grams)
  • 1/4 cup heavy cream (30 grams)
  • 1 teaspoon of butter
  • A pinch of salt

For the Chocolate Cream

  • 2 cups heavy cream (50 mL)
  • 12 oz. dark chocolate (350 grams)

Steps

Baking the Crust

  1. Mix the crust ingredients together using a food processor.Continue until it looks like a dough.
  2. Wrap the dough in aluminum foil.Chill for 30 minutes.
  3. Line a 24-26 inch deep tart tin with the dough.Patch up any holes that form while covering the tin. Cover it and let chill for another 30 minutes.
  4. Preheat the oven to 375 degrees F.Prick holes into the tart shell with a fork and bake for 25 minutes.

Making the Sauce

  1. Place the sugar into a saucepan and bring to a boil over medium heat.Wait for it to turn a rich amber color.
  2. Remove the pan from heat.Whisk in butter and cream. The mixture will bubble, so be careful.
  3. Pour caramel into the cooled tart crust.Let it cool for 1 hour.

Making the Chocolate Cream

  1. Chop the chocolate into small cubes.
  2. Bring the heavy cream to a boil in a saucepan over medium heat.
  3. Put the chocolate in a bowl and pour the cream on it.Let it sit for a few minutes and stir until it's smooth.
  4. Pour the mixture evenly over the tart.Refrigerate it for 24 hours. Add some whipped cream on top if you would like and serve.
    • Add unsweetened cocoa powder on top for a more decorative look.
