Secrets of harvesting pickled fruits, vegetables and berries

A rich harvest of certain vegetables and fruits sets the task of the dacha owners to properly store them. If you have already mastered all the modern methods of canning, it is time to turn your attention to the past. Urination was used to preserve food for centuries, and even without refrigerators and sealing machines, our ancestors tasted in the deep autumn, and sometimes in winter, with tasty blanks. Here are a few secrets of the traditional canning method and the most interesting recipes in which it is used.

Use any hard fruits and vegetables. If you wish, you can even soak the beets, after cleaning the roots from the ground and washing.

The best cookware is a wooden barrel, but you can use ordinary glass jars. Brine from pickled vegetables contains many useful substances and can be used independently. For urinating small forks of cabbage, apples and berries, a deep enameled pan is perfect.

It is best to use clean well water for urinating. However, precautions should be taken: today many wells in villages are not suitable for use. Make sure that the content of nitrates in the water does not exceed the permissible values. If in doubt, use boiled tap water or bottled water.

When urinating in water, add sugar, salt or a mixture thereof. Salt, take a large, better stone.

Delicious soaked apples

On the three-liter jar you will need:

  • Hard apples of late varieties;
  • a glass of sugar (you can add salt);
  • water;
  • wooden sticks or skewers;
  • currant leaves

Traditionally, when urinating apples, salt is added to the sugar. It should be noted that the taste is quite specific. Choose your combination by experience. Choose whole apples without damage to the rind (excellent grade "Antonovka"). After filling the jar with fruit, put crosswise wooden sticks or skewers on top to create a small bend. Sugar (and salt, if desired) dissolve in water and pour the jar to the top. Cover the apples with a clean plastic lid. Banks are kept at room temperature until the brine becomes cloudy, and then put in the refrigerator or cellar for a half or two months.

An interesting alternative is the washed grapes

You will need:

  • Grapes (the volume that will fill the jar);
  • a glass of sugar;
  • water;
  • two tablespoons of mustard or a spoon of mustard powder

Grapes for urinating should be completely stripped from the branches, otherwise the billet will acquire an unpleasant bitter taste. Sugar and mustard dissolve in water and fill them with berries. Fill the bank to the top, do not need the yoke. Cover the grapes and immediately put in a cold place. Soaked grapes ready in a month.

Pears with rye flour

You will need:

  • Small pears of firm grades;
  • enameled pot for five liters;
  • tablespoon of salt;
  • a teaspoon of mustard powder;
  • 3 tablespoons of rye flour;
  • sieve or gauze;
  • linen fabric;
  • wooden board

The flour is bred in a glass of warm water, and then pour a liter of steep boiling water. It is necessary to wait until this mixture is completely cooled. Pears are laid out in dishes up their tails in several rows. A mixture of flour and water is filtered through a sieve or cheesecloth, mustard is added and poured to pears. The place left in the pan is filled with cold water. On top put a piece of clean linen cloth, put a wooden board, and on it oppression.As the latter, you can use a jar of water. In a cold cellar, pears will be ready in 1.5 months.

Moistened lingonberry with cinnamon

You will need:

  • Cowberry berries;
  • half a teaspoon of cinnamon (or a stick);
  • a glass of sugar;
  • tablespoon of salt;
  • three-liter can

Lingonberry can be wetted separately or with apples. Wash the berries and put them in a jar. Sugar, salt and cinnamon dissolved in water. It is best to use cinnamon in the sticks, but the powder will do. Soak the workpiece under the cover in a cool place for 1.5 -2 months.

Watered rowan with cloves

You will need:

  • Enamel pan;
  • 3 tablespoons of sugar;
  • Rowan;
  • 7-8 sprigs of dry cloves;
  • natural fabric, wooden board, oppression;

Today, few people eat this berry, but there are a lot of vitamins in it. Collect mountain ash after the first frost occurred. Separate the berries from the branches, rinse and cover with water with sugar and salt. Add a clove, cover with a natural cloth and then a board. Rowan wet with oppression in a cool place for a month.
